For mother’s day I usually take my mother out for high tea. It’s one of our favourite things to do together. Unfortunately due to COVID 19 we couldn’t go out for high tea, so I decided to bring high tea to her by making her some fresh scones.

Scones are one of my mother’s favourite things, and they’re also one of the easiest and quickest things to bake. Over the years I’ve tried many different recipes and am still looking for the perfect one.

Here’s the recipe I used yesterday!


INGREDIENTS


  • ¼ cup sugar

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 3 cups all-purpose/plain flour, plus more for surface

  • ½ cup chilled unsalted butter, cut into pieces

  • 1 large egg, beaten to blend

  • 1¼ cups heavy cream, plus more for brushing

  • 1 cup berries

  • ½ cup white chocolate

  • Demerara or raw sugar (for sprinkling)


METHOD


  1. Preheat oven to 190°C

  2. . Whisk granulated sugar, baking powder, baking soda, salt, and 3 cups flour in a large bowl to combine.

  3. Add butter and toss to coat.

  4. Using your fingers or a pastry blender, work butter into flour until only pea-size pieces remain.

  5. Make a well in the centre; add egg and 1¼ cups cream and mix with a fork, incorporating dry ingredients a little at a time, until a shaggy dough forms (it’s okay if it looks a little dry; don’t overwork).

  6. Add this stage, mix in the berries and white chocolate and lightly knead dough in bowl until it just comes together.

  7. Turn out onto a lightly floured surface and pat into a 2.5 cm thick round.

  8. Cut into 8 wedges and transfer to a parchment-lined baking sheet.

  9. Brush dough with cream and sprinkle with demerara sugar. Bake scones until golden brown, 25–30 minutes.

  10. Serve warm with a selection of jams and whipped cream.

NOTES

  • At step 6, before adding in the berries and white chocolate, I halved the dough to make 4 plain scones and 4 berry and white chocolate scones. Therefore I only added half the amount of berries and white chocolate that’s listed in the ingredients.

  • It was my first time making this recipe and I found them really delicious. I had one the next day without any toppings and it tasted just as good.
